Coconut, Lime and Passion Fruit Porridge

We all know porridge is good for us. But when you tuck into a bowl every morning, those nourishing oats can get samey pretty quickly. Here’s a new take…Creamy coconut makes an indulgent change from your regular free-from milk, while sharp passion fruit and zesty lime bring a taste of the tropics to breakfast time…

Method

Place the oats in a small saucepan and add the coconut milk. Add the maple syrup, lime juice and pinch of salt, and stir until combined.

Heat for a couple of minutes on a low-medium heat, stirring regularly. Bring to the boil briefly, then reduce the heat, stir in half of the passion fruit seeds and pulp, and simmer for 3-4 minutes, stirring regularly.

Serve with the rest of the passion fruit and the lime zest sprinkled on top.

  • 100g porridge oats
  • 400ml tin coconut milk
  • 1 tsp maple syrup/honey
  • Juice of ½ lime
  • Pinch of salt
  • Seeds and pulp from 2 passion fruit
  • 1 tsp lime zest
  • serves 2

    This is a really great idea Katy – so easy. I’ve started making my own syrups with leftover fruit to douse on porridge/add to soda water or to gin and tonics. But passion fruit on coconut milk porridge is absolutely inspired.
